Black Sesame and Spinach Salad with Sesame Dressing

Ingrediënten

  • 200g fresh spinach leaves (washed)
  • 3 tbsp black sesame seeds
  • 1 carrot (thin strips)
  • 100g cooked black beans (canned, drained)
  • 2 spring onions (sliced into rings)
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp grated fresh ginger
  • Optional: 1 tbsp roasted sunflower seeds

Bereiding

  1. Toast black sesame seeds briefly in a dry pan (1-2 minutes) until fragrant.
  2. In a bowl, mix sesame oil, rice vinegar, honey and grated ginger to make a dressing.
  3. Place spinach leaves, carrot strips, black beans and spring onions in a large bowl.
  4. Pour dressing over and toss gently.
  5. Sprinkle with toasted black sesame seeds and optional sunflower seeds.
  6. Serve immediately at room temperature.

Gebruiksadvies

Eat as a light lunch or side dish, 2-3 times per week. Serve at room temperature. Very suitable for blood deficiency due to chronic fatigue or after illness.

Contra-indicaties

Not for use with acute infections with fever, excessive heat, or kidney stones (spinach contains oxalates).
