Black Sesame and Spinach Salad with Sesame Dressing

Ingrediënten
- 200g fresh spinach leaves (washed)
- 3 tbsp black sesame seeds
- 1 carrot (thin strips)
- 100g cooked black beans (canned, drained)
- 2 spring onions (sliced into rings)
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp grated fresh ginger
- Optional: 1 tbsp roasted sunflower seeds
Bereiding
- Toast black sesame seeds briefly in a dry pan (1-2 minutes) until fragrant.
- In a bowl, mix sesame oil, rice vinegar, honey and grated ginger to make a dressing.
- Place spinach leaves, carrot strips, black beans and spring onions in a large bowl.
- Pour dressing over and toss gently.
- Sprinkle with toasted black sesame seeds and optional sunflower seeds.
- Serve immediately at room temperature.
Gebruiksadvies
Eat as a light lunch or side dish, 2-3 times per week. Serve at room temperature. Very suitable for blood deficiency due to chronic fatigue or after illness.
Contra-indicaties
Not for use with acute infections with fever, excessive heat, or kidney stones (spinach contains oxalates).
