Black Sesame Walnut Congee with Honey

Ingrediënten

  • 80g black rice (or brown rice)
  • 30g black sesame seeds (ground)
  • 30g walnuts (finely chopped)
  • 15g goji berries
  • 10g dried longan (optional)
  • 5 jujube dates (pitted, chopped)
  • 1 liter water
  • 2 tbsp honey (or coconut blossom sugar)
  • 200 ml plant-based milk (optional, for creaminess)

Bereiding

  1. Rinse black rice and soak for 2 hours (or overnight) in cold water.
  2. Place soaked rice with 1 liter of water in a pot. Bring to a boil.
  3. Reduce heat and simmer for 30-40 minutes until rice is cooked and congee is creamy. Stir occasionally.
  4. Add walnuts, goji berries, longan and jujube. Cook for another 10 minutes.
  5. Grind black sesame seeds finely in a mortar or coffee grinder.
  6. Stir ground black sesame and optional plant-based milk into the congee.
  7. Remove from heat and stir in honey.
  8. Serve warm. Garnish with extra walnuts and sesame seeds.

Gebruiksadvies

Eat in the morning or evening as breakfast or light meal. Serve warm. Preferably daily for 2-3 weeks for best results. Very suitable for elderly and people with chronic fatigue.

Contra-indicaties

Not for use with excessive heat, diarrhea, abdominal bloating, or acute infections. Caution with nut allergies.
