Black Sesame and Walnut Rice with Dates

Ingrediënten
- 200g black rice (or brown rice)
- 50g black sesame seeds
- 50g walnuts (finely chopped)
- 8 jujube dates (pitted, chopped)
- 20g goji berries
- 2 cm fresh ginger (thinly sliced)
- 600 ml water
- 1 tbsp coconut oil
- Optional: 1 tbsp honey
Bereiding
- Rinse black rice and soak for 2 hours in cold water.
- Heat coconut oil in a pan. Add ginger and sauté briefly.
- Add soaked rice, dates, goji berries and water. Bring to a boil.
- Reduce heat and simmer for 25-30 minutes until rice is cooked.
- Meanwhile, toast black sesame seeds briefly in a dry pan (2 minutes).
- Finely chop walnuts.
- Stir sesame seeds and walnuts into the rice.
- Add honey if desired. Serve warm.
Gebruiksadvies
Eat as lunch or dinner, 2-3 times per week. Serve warm. Preferably eat at midday for optimal absorption. Very suitable for elderly and people with chronic fatigue.
Contra-indicaties
Not for use with excessive heat, acute infections, or severe digestive disorders.
