Black Sesame and Walnut Rice with Dates

Ingrediënten

  • 200g black rice (or brown rice)
  • 50g black sesame seeds
  • 50g walnuts (finely chopped)
  • 8 jujube dates (pitted, chopped)
  • 20g goji berries
  • 2 cm fresh ginger (thinly sliced)
  • 600 ml water
  • 1 tbsp coconut oil
  • Optional: 1 tbsp honey

Bereiding

  1. Rinse black rice and soak for 2 hours in cold water.
  2. Heat coconut oil in a pan. Add ginger and sauté briefly.
  3. Add soaked rice, dates, goji berries and water. Bring to a boil.
  4. Reduce heat and simmer for 25-30 minutes until rice is cooked.
  5. Meanwhile, toast black sesame seeds briefly in a dry pan (2 minutes).
  6. Finely chop walnuts.
  7. Stir sesame seeds and walnuts into the rice.
  8. Add honey if desired. Serve warm.

Gebruiksadvies

Eat as lunch or dinner, 2-3 times per week. Serve warm. Preferably eat at midday for optimal absorption. Very suitable for elderly and people with chronic fatigue.

Contra-indicaties

Not for use with excessive heat, acute infections, or severe digestive disorders.
