Caramelized Carrot Ginger Soup

Ingrediënten

  • 600g carrots (diced)
  • 1 onion (chopped)
  • 4 cm fresh ginger (sliced thinly)
  • 2 tbsp coconut oil
  • 2 tsp black peppercorns (freshly ground)
  • 1 tsp turmeric powder
  • 1 tsp paprika powder (smoked, optional)
  • 800 ml vegetable broth
  • 1 tbsp maple syrup or coconut blossom sugar
  • Optional: 100 ml coconut milk (for creaminess)

Bereiding

  1. Heat coconut oil in a soup pot over medium heat. Sauté onion for 3 minutes until translucent.
  2. Add carrot cubes and fry for 10 minutes until they start to caramelize.
  3. Add ginger, black pepper, turmeric and paprika powder. Sauté for 2 minutes until fragrant.
  4. Add maple syrup and let caramelize briefly.
  5. Deglaze with vegetable broth. Bring to a boil.
  6. Simmer for 20 minutes until carrots are soft.
  7. Blend the soup with an immersion blender until smooth.
  8. Optional: stir in coconut milk and heat through. Serve immediately hot.

Gebruiksadvies

Eat as breakfast or lunch, 3-4 times per week. Serve hot. Preferably eat on an empty stomach or midday for optimal effect on spleen and stomach meridians.

Contra-indicaties

Not for use with excessive heat, heartburn, acute viral infections with fever, or pregnancy (large amounts of ginger). Caution with gallstones.
