Caramelized Carrot Ginger Soup

Ingrediënten
- 600g carrots (diced)
- 1 onion (chopped)
- 4 cm fresh ginger (sliced thinly)
- 2 tbsp coconut oil
- 2 tsp black peppercorns (freshly ground)
- 1 tsp turmeric powder
- 1 tsp paprika powder (smoked, optional)
- 800 ml vegetable broth
- 1 tbsp maple syrup or coconut blossom sugar
- Optional: 100 ml coconut milk (for creaminess)
Bereiding
- Heat coconut oil in a soup pot over medium heat. Sauté onion for 3 minutes until translucent.
- Add carrot cubes and fry for 10 minutes until they start to caramelize.
- Add ginger, black pepper, turmeric and paprika powder. Sauté for 2 minutes until fragrant.
- Add maple syrup and let caramelize briefly.
- Deglaze with vegetable broth. Bring to a boil.
- Simmer for 20 minutes until carrots are soft.
- Blend the soup with an immersion blender until smooth.
- Optional: stir in coconut milk and heat through. Serve immediately hot.
Gebruiksadvies
Eat as breakfast or lunch, 3-4 times per week. Serve hot. Preferably eat on an empty stomach or midday for optimal effect on spleen and stomach meridians.
Contra-indicaties
Not for use with excessive heat, heartburn, acute viral infections with fever, or pregnancy (large amounts of ginger). Caution with gallstones.
