Cucumber Mint Salad with Lime and Coriander

Ingrediënten

  • 2 cucumbers (thinly sliced)
  • 1 bunch fresh mint (finely chopped)
  • 1 bunch fresh coriander (finely chopped)
  • 2 limes (juice and zest)
  • 1 tsp black pepper (freshly ground)
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp honey (optional)
  • Optional: 1 red chili (finely chopped)

Bereiding

  1. Wash cucumbers and slice thinly. Pat dry with paper towel.
  2. Finely chop mint and coriander.
  3. In a bowl, mix lime zest, lime juice, sesame oil, rice vinegar, black pepper and honey.
  4. Add cucumber slices and fresh herbs. Toss gently.
  5. Garnish with optional red chili.
  6. Chill for 10 minutes before serving.

Gebruiksadvies

Eat as a side dish with warm meals, 2-3 times per week. Serve chilled or at room temperature. Not suitable for spleen-qi deficiency with loose stools.

Contra-indicaties

Not for use with severe spleen-qi deficiency, chronic diarrhea, or pregnancy (large amounts of mint).
