Cucumber Mint Salad with Lime and Coriander

Ingrediënten
- 2 cucumbers (thinly sliced)
- 1 bunch fresh mint (finely chopped)
- 1 bunch fresh coriander (finely chopped)
- 2 limes (juice and zest)
- 1 tsp black pepper (freshly ground)
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp honey (optional)
- Optional: 1 red chili (finely chopped)
Bereiding
- Wash cucumbers and slice thinly. Pat dry with paper towel.
- Finely chop mint and coriander.
- In a bowl, mix lime zest, lime juice, sesame oil, rice vinegar, black pepper and honey.
- Add cucumber slices and fresh herbs. Toss gently.
- Garnish with optional red chili.
- Chill for 10 minutes before serving.
Gebruiksadvies
Eat as a side dish with warm meals, 2-3 times per week. Serve chilled or at room temperature. Not suitable for spleen-qi deficiency with loose stools.
Contra-indicaties
Not for use with severe spleen-qi deficiency, chronic diarrhea, or pregnancy (large amounts of mint).
