Garlic Onion Soup with Thyme and Black Pepper

Ingrediënten
- 3 onions (in thin rings)
- 10 cloves garlic (minced)
- 5 cm fresh ginger (grated)
- 2 tbsp fresh thyme (finely chopped)
- 1 tbsp fresh rosemary (finely chopped, optional)
- 2 tsp black peppercorns (freshly ground)
- 1 tsp red pepper flakes (optional)
- 1.5 L vegetable broth
- 3 tbsp coconut oil
- Optional: 1 bay leaf
- Optional: fresh parsley (for garnish)
Bereiding
- Heat coconut oil in a soup pot over medium heat.
- Add onion rings and sauté for 5-7 minutes until translucent and soft.
- Add garlic, ginger, thyme, rosemary, black pepper and red pepper flakes. Cook for 2 minutes until fragrant.
- Add vegetable broth and bay leaf. Bring to a boil.
- Reduce heat and simmer for 15-20 minutes.
- Remove bay leaf. Optionally blend with an immersion blender for a smoother texture.
- Garnish with fresh parsley. Serve immediately hot.
Gebruiksadvies
Eat 1-2 bowls per day at the first signs of a cold. Serve hot. Preferably eat in the evening to support sleep and promote sweating. Very suitable for cold and damp weather.
Contra-indicaties
Not for use with high fever with red throat and thirst, acute sore throat with yellow discharge, excessive heat, stomach ulcer, or pregnancy (large amounts).
