Garlic Onion Soup with Thyme and Black Pepper

Ingrediënten

  • 3 onions (in thin rings)
  • 10 cloves garlic (minced)
  • 5 cm fresh ginger (grated)
  • 2 tbsp fresh thyme (finely chopped)
  • 1 tbsp fresh rosemary (finely chopped, optional)
  • 2 tsp black peppercorns (freshly ground)
  • 1 tsp red pepper flakes (optional)
  • 1.5 L vegetable broth
  • 3 tbsp coconut oil
  • Optional: 1 bay leaf
  • Optional: fresh parsley (for garnish)

Bereiding

  1. Heat coconut oil in a soup pot over medium heat.
  2. Add onion rings and sauté for 5-7 minutes until translucent and soft.
  3. Add garlic, ginger, thyme, rosemary, black pepper and red pepper flakes. Cook for 2 minutes until fragrant.
  4. Add vegetable broth and bay leaf. Bring to a boil.
  5. Reduce heat and simmer for 15-20 minutes.
  6. Remove bay leaf. Optionally blend with an immersion blender for a smoother texture.
  7. Garnish with fresh parsley. Serve immediately hot.

Gebruiksadvies

Eat 1-2 bowls per day at the first signs of a cold. Serve hot. Preferably eat in the evening to support sleep and promote sweating. Very suitable for cold and damp weather.

Contra-indicaties

Not for use with high fever with red throat and thirst, acute sore throat with yellow discharge, excessive heat, stomach ulcer, or pregnancy (large amounts).
