Lamb's Quarters Bean Soup with Ginger

Ingrediënten

  • 200g fresh lamb's quarters (washed, roughly chopped)
  • 100g white beans (dried, soaked)
  • 5 cm fresh ginger (thinly sliced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp black pepper (freshly ground)
  • 1.5 L vegetable broth
  • 2 tbsp coconut oil
  • Optional: 1 tbsp rice vinegar

Bereiding

  1. Soak white beans for at least 4 hours or overnight in cold water. Drain and rinse.
  2. Heat coconut oil in a soup pot. Sauté onion, garlic and ginger for 3 minutes.
  3. Add soaked beans and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer for 30-40 minutes until beans are tender.
  5. Add lamb's quarters and black pepper. Cook for another 5 minutes until lamb's quarters have wilted.
  6. Add rice vinegar if desired for slight acidity.
  7. Serve warm.

Gebruiksadvies

Eat as lunch or light meal, 2-3 times per week. Serve warm. Very suitable for damp weather or dampness symptoms. Do not drink too much with cold stomach.

Contra-indicaties

Not for use with severe spleen-qi deficiency, chronic diarrhea, pregnancy, or kidney stones (lamb's quarters contains oxalates).
