Lamb's Quarters Bean Soup with Ginger

Ingrediënten
- 200g fresh lamb's quarters (washed, roughly chopped)
- 100g white beans (dried, soaked)
- 5 cm fresh ginger (thinly sliced)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 tsp black pepper (freshly ground)
- 1.5 L vegetable broth
- 2 tbsp coconut oil
- Optional: 1 tbsp rice vinegar
Bereiding
- Soak white beans for at least 4 hours or overnight in cold water. Drain and rinse.
- Heat coconut oil in a soup pot. Sauté onion, garlic and ginger for 3 minutes.
- Add soaked beans and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 30-40 minutes until beans are tender.
- Add lamb's quarters and black pepper. Cook for another 5 minutes until lamb's quarters have wilted.
- Add rice vinegar if desired for slight acidity.
- Serve warm.
Gebruiksadvies
Eat as lunch or light meal, 2-3 times per week. Serve warm. Very suitable for damp weather or dampness symptoms. Do not drink too much with cold stomach.
Contra-indicaties
Not for use with severe spleen-qi deficiency, chronic diarrhea, pregnancy, or kidney stones (lamb's quarters contains oxalates).
