Roasted Lamb's Quarters with Garlic

Strengthens the spleen, dries dampness, removes bloating, promotes digestion

Ingrediënten

  • 500g fresh lamb's quarters (washed)
  • 6 cloves garlic (minced)
  • 3 cm fresh ginger (grated)
  • 2 tbsp coconut oil
  • 1 tsp black pepper (freshly ground)
  • 1 tsp cumin powder (optional)
  • 1 tbsp sesame seeds
  • Optional: 1 tbsp sesame oil

Bereiding

  1. Preheat oven to 200°C. Line a baking sheet with parchment paper.
  2. Wash lamb's quarters thoroughly and pat dry.
  3. In a bowl, mix lamb's quarters with coconut oil, garlic, ginger, black pepper and cumin.
  4. Spread evenly on the baking sheet.
  5. Roast for 10-12 minutes until leaves are crispy and edges are brown.
  6. Sprinkle with sesame seeds and optional sesame oil.
  7. Serve immediately warm.

Gebruiksadvies

Eat as a side dish with warm meals, 2-3 times per week. Serve warm. Very suitable for damp weather. Can be combined with ginger-steamed rice.

Contra-indicaties

Not for use with kidney stones (oxalates), gout, or severe spleen-qi deficiency.
