Roasted Red Cabbage with Apple and Caraway Seeds

Ingrediënten
- 1 medium red cabbage (approx 800g, shredded)
- 2 sour apples (e.g. Elstar or Granny Smith, cubed)
- 1 onion (chopped)
- 2 tbsp caraway seeds
- 2 tbsp black peppercorns (freshly ground)
- 3 cloves garlic (minced)
- 4 cm fresh ginger (grated)
- 4 tbsp apple cider vinegar
- 3 tbsp coconut oil
- 2 tbsp maple syrup or honey
- 1 tsp salt (to taste)
- Optional: 1 tbsp fresh rosemary (finely chopped)
Bereiding
- Preheat oven to 200°C. Line a baking sheet with parchment paper.
- Heat coconut oil in a large pan. Sauté onion for 3 minutes until translucent. Add garlic, ginger and caraway seeds and cook for 1 minute.
- Add shredded red cabbage and fry for 5 minutes until slightly wilted.
- Add apple cubes, black pepper and optional rosemary. Cook for 2 minutes.
- Deglaze with apple cider vinegar and maple syrup. Stir well.
- Transfer the mixture to the baking sheet and spread evenly.
- Roast for 20-25 minutes in the oven, stirring halfway. The cabbage should be soft and lightly caramelized at the edges.
- Season with salt. Serve warm.

Eat as warm side dish or light meal, 2-3 times per week. Serve warm. Preferably eat in the afternoon or evening. Very suitable after a heavy meal to support digestion.
Contra-indicaties
Not for use with acute stomach ulcers, excessive heat with thirst, gout (moderation), or severe thyroid disorders (raw red cabbage in large amounts).
