Roasted Red Cabbage with Apple and Caraway Seeds

Ingrediënten

  • 1 medium red cabbage (approx 800g, shredded)
  • 2 sour apples (e.g. Elstar or Granny Smith, cubed)
  • 1 onion (chopped)
  • 2 tbsp caraway seeds
  • 2 tbsp black peppercorns (freshly ground)
  • 3 cloves garlic (minced)
  • 4 cm fresh ginger (grated)
  • 4 tbsp apple cider vinegar
  • 3 tbsp coconut oil
  • 2 tbsp maple syrup or honey
  • 1 tsp salt (to taste)
  • Optional: 1 tbsp fresh rosemary (finely chopped)

Bereiding

  1. Preheat oven to 200°C. Line a baking sheet with parchment paper.
  2. Heat coconut oil in a large pan. Sauté onion for 3 minutes until translucent. Add garlic, ginger and caraway seeds and cook for 1 minute.
  3. Add shredded red cabbage and fry for 5 minutes until slightly wilted.
  4. Add apple cubes, black pepper and optional rosemary. Cook for 2 minutes.
  5. Deglaze with apple cider vinegar and maple syrup. Stir well.
  6. Transfer the mixture to the baking sheet and spread evenly.
  7. Roast for 20-25 minutes in the oven, stirring halfway. The cabbage should be soft and lightly caramelized at the edges.
  8. Season with salt. Serve warm.

Gebruiksadvies

Eat as warm side dish or light meal, 2-3 times per week. Serve warm. Preferably eat in the afternoon or evening. Very suitable after a heavy meal to support digestion.

Contra-indicaties

Not for use with acute stomach ulcers, excessive heat with thirst, gout (moderation), or severe thyroid disorders (raw red cabbage in large amounts).
