Rosemary Lemon Tofu Stir-fry

Ingrediënten
- 200g firm tofu (cubed)
- 1 lemon (zest and juice)
- 2 sprigs fresh rosemary (chopped)
- 1 leek (sliced into rings)
- 1 tbsp coconut oil or olive oil
- Optional: pinch of black pepper
Bereiding
- Drain tofu cubes on paper towel for 10 minutes.
- Keep lemon zest and juice separate. Chop rosemary finely.
- Slice leek into thin rings.
- Heat oil in wok or frying pan.
- Fry tofu until golden brown and crispy (about 5 minutes).
- Add leek and rosemary. Stir-fry for 2-3 minutes.
- Add lemon zest and juice. Optional: black pepper.
- Heat through for 1 more minute.
- Serve warm.
