Rosemary Lemon Tofu Stir-fry

Ingrediënten

  • 200g firm tofu (cubed)
  • 1 lemon (zest and juice)
  • 2 sprigs fresh rosemary (chopped)
  • 1 leek (sliced into rings)
  • 1 tbsp coconut oil or olive oil
  • Optional: pinch of black pepper

Bereiding

  1. Drain tofu cubes on paper towel for 10 minutes.
  2. Keep lemon zest and juice separate. Chop rosemary finely.
  3. Slice leek into thin rings.
  4. Heat oil in wok or frying pan.
  5. Fry tofu until golden brown and crispy (about 5 minutes).
  6. Add leek and rosemary. Stir-fry for 2-3 minutes.
  7. Add lemon zest and juice. Optional: black pepper.
  8. Heat through for 1 more minute.
  9. Serve warm.

Eat as lunch or dinner, 2-3 times per week. Serve warm.

Not for use with acute stomach issues, stomach ulcers, or severe yin deficiency with dryness.
