Turmeric Ginger Lentil Soup

Ingrediënten

  • 150g red lentils
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cm fresh ginger (grated)
  • 1 tbsp turmeric powder
  • 1 tsp black peppercorns (freshly ground)
  • 1 bay leaf
  • 1 tsp cumin seeds (optional)
  • 800ml vegetable broth
  • 2 tbsp coconut oil

Bereiding

  1. Rinse lentils. Prepare onion, garlic and ginger.
  2. Heat coconut oil in soup pot. Sauté onion until translucent (3 minutes).
  3. Add garlic, ginger and cumin seeds. Cook for 1 minute.
  4. Add turmeric and black pepper. Stir well.
  5. Add lentils, broth and bay leaf.
  6. Bring to a boil, then simmer for 20-25 minutes until lentils are soft.
  7. Remove bay leaf. Optional: blend soup for smoother texture.
  8. Serve warm.

Gebruiksadvies

Eat as light meal or lunch, 3-4 times per week. Serve warm. Combine with light exercise for best results.

Contra-indicaties

Not for use with acute bleeding, stomach ulcers, pregnancy (large amounts of turmeric), or severe yin deficiency with dryness.
