Turmeric Ginger Lentil Soup

Ingrediënten
- 150g red lentils
- 1 onion (chopped)
- 3 cloves garlic (minced)
- 2 cm fresh ginger (grated)
- 1 tbsp turmeric powder
- 1 tsp black peppercorns (freshly ground)
- 1 bay leaf
- 1 tsp cumin seeds (optional)
- 800ml vegetable broth
- 2 tbsp coconut oil
Bereiding
- Rinse lentils. Prepare onion, garlic and ginger.
- Heat coconut oil in soup pot. Sauté onion until translucent (3 minutes).
- Add garlic, ginger and cumin seeds. Cook for 1 minute.
- Add turmeric and black pepper. Stir well.
- Add lentils, broth and bay leaf.
- Bring to a boil, then simmer for 20-25 minutes until lentils are soft.
- Remove bay leaf. Optional: blend soup for smoother texture.
- Serve warm.
Gebruiksadvies
Eat as light meal or lunch, 3-4 times per week. Serve warm. Combine with light exercise for best results.
Contra-indicaties
Not for use with acute bleeding, stomach ulcers, pregnancy (large amounts of turmeric), or severe yin deficiency with dryness.
